A easy low effort but delightful ‘healthier’ bread

Ingredients

  • 2 ripe medium sized bananas

  • 1 teaspoon dry yeast

  • ¼ teaspoon salt

  • 1 large egg

  • 2 cups all purpose flour (more for dusting)

  • 2 tablespoons unsalted butter

  • 1/3 cup raisins

  • 1/3 cup chocolate chips (optional)

Directions

  • Unpeel and mash the bananas. Mix in yeast, salt and egg. Add in all purpose flour and mix well, pour in butter and mix till you can’t see any flour left.
  • Add the raisins and chocolate and fold well into the dough. Cover for 1 hour & 30 minutes or till it doubles in size.
  • Uncover and knead in a smooth surface to release air. Flatten and slice to 9 pieces roll into a ball. Place these on a baking tray and cover for 1 hour & 30 minutes or till it doubles in size.
  • Bake in a 350°F or 175°C preheated oven for 12 – 15 minutes. Take it out of the oven and let it cool to room temperature before taking these out.
  • Enjoy with a hot mug of coffee!

Notes

  • You can remove the raisins and chocolate if you’d like, or only double the raisins and remove the chocolate. Add or replace the fillings to your taste.
  • Dust the surface with flour and roll the dough ball over it to make it easier to handle.
  • If you find the dough really sticky after most of the flour has been absorbed by the dough, at ¼ or 1/3 cup more till you don’t find the dough sticking too much to your fingers
