Marble Chiffon Cake

There are some random moments when we crave for cake but to the level that we only want one slice. That moment often happens to me which leads to me buying a stock of cake slices from Goldilocks and Red Ribbon. One of my favorite cake is definitely the marble slice. If I buy 10 cake slices, 5 of them would be the marble slice. This made me wonder if I really wanted just a slice or a whole cake.

Since I bought a new loaf pan, I thought of it as a sign to try and make my own marble chiffon cake. With the various cake flavors I can try with my new loaf pan, I had listed a number of reasons why marble chiffon cake would be the perfect one to try. As a fan of marble cake slices, it would be a lot cheaper if I make my own at home. I also saw this opportunity to try to change my niece’s favorite cake flavor. She likes the red velvet cake so much and I will try to make the marble chiffon cake her new favorite. Marble chiffon cake has the right level of sweetness especially when eaten as a snack instead of a dessert. If the swirls are well distributed, this light chiffon cake will have small hints of chocolate and coffee goodness! With lesser calories compared to flavoured cakes, I can enjoy my cake whenever I want. This chiffon cake is spongy and lightly dense. The last thing would be its marble look. The swirls make it more appetizing to eat.

HOW TO COOK MARBLE CHIFFON CAKE

Just like any other cake, making a marble chiffon cake will take a few but simple steps. The first thing to do is to prepare your cocoa paste. Simply mix some cocoa powder with water. In this recipe, I also included some coffee powder for some hint of caffeine. Instead of just chocolate flavor, there will some kind of mocha flavor in this paste.

Start your cake batter by whisking your egg whites with sugar and vanilla until soft peaks. This will ensure that your cake will end up fluffy and cloudy. The next thing to do is to add the other ingredients one by one until you achieve a thick and nice cake batter. Remember to sift the flour before adding to avoid lumps. Fold the mixture using a spatula to incorporate some air into the batter. Separate some batter and mix it with the cocoa paste made earlier.

Now, here is the fun part—designing the cake! Pour half of the batter into a loaf pan and then add 3 scoops of the cocoa batter. Swirl the cocoa batter using a stick to create a marble effect. I swear this part is so satisfying! It is much like painting your own cake. Pour the rest of the batter and repeat the marbling steps. Since this a no-oven recipe, preheat your pan before pan-baking the marble chiffon cake. When the edges are starting to brown, then the cake is done. Let the cake cool before serving. Ingredients

  • 2 tablespoons cocoa powder

  • 1 teaspoon coffee powder (optional)

  • 2 tablespoons water

  • 2 eggs (separate the yolks from the whites)

  • ½ teaspoon vanilla

  • ½ cup white sugar

  • ½ cup oil

  • 2 tablespoons milk

  • ¾ cup all purpose flour

  • 1 teaspoon baking powder

Directions

  • In a small bowl, combine the cocoa powder, coffee powder and water. Mix them well until you form a paste-like mixture. Set aside.
  • In another bowl, place the egg whites and whisk until foamy. Add the vanilla. Whisk while gradually adding the white sugar. Continue whisking until you achieve soft peaks.
  • Add the oil and whisk well. Scrape the sides once in a while. Add the egg yolks and milk and mix well. Sift the flour and baking powder into the bowl and fold gently using a spatula until well-mixed.
  • Take ½ cup of the batter and mix it with the cocoa-coffee paste. Mix until there are no white streaks left. Set aside.
  • Prepare a loaf pan. Line it with parchment paper or grease the sides with oil. Pour half of the batter. Place 3 dollops of the cocoa batter. Using a stick, do a swirling or “W” motion horizontally then vertically over the batter to create the marble effect.
  • Pour the rest of the batter and pour the rest of the cocoa batter. Repeat the swirling motion. Tap the pan 3 times to even the top.
  • Preheat a pan using medium heat. Cover it for 5 minutes. Place a wire rack inside and the loaf pan above the rack. Cover the pan and let it cook for 30 to 35 minutes. The cake is ready when the edges have browned.
  • Let the marble chiffon cake cool to room temperature. Use a knife to scrape the edges of the cake. Flip the cake and remove the parchment paper before serving.
  • Slice the marble chiffon cake into serving pieces. Enjoy!

Marble Chiffon Cake Recipe (TAGALOG)

PAANO LUTUIN:

  1. Sa isang maliit na bowl, paghaluin ang cocoa powder, coffee powder at tubig. Haluin ng mabuti hanggang maging paste.
  2. Sa isa pang bowl, ilagay ang puti ng itlog at i-whisk hanggang maging foamy. Sunod na ilagay ang vanilla. I-whisk ito habang paunti-unting nilalagay ang asukal. Kapag na-achieve mo na ang soft peaks, okay na ito.
  3. Ilagay ang mantika at haluin. I-scrape ang sides paminsan-minsan. Ilagay ang pula ng itlog at gatas. I-sift ang harina at baking powder bago ilagay sa bowl. I-fold ang batter ng dahan-dahan gamit ang spatula.
  4. Kumuha ng ½ cup ng batter at ihalo sa cocoa paste. Haluin ng mabuti.
  5. Kumuha ng isang loaf pan at lagyan ito ng parchment paper. Ilagay ang kalahati ng batter. Maglagay ng 3 dollops ng cocoa batter. Gamit ang isang stick, gumawa ng swirling o “W” sa batter para magkaroon ng marble effect.
  6. Ilagay ang natitirang batter at cocoa batter. Gawin ulit ang swirling motion. I-tap ang pan ng 3 beses para pumantay.
  7. I-preheat ang kaldero gamit ang katamtamang apoy at takpan ito ng 5 minuto. Ilagay ang wire rack at ang loaf pan sa loob. Takpan ang kaldero at hayaan to maluto ng 30 hanggang 35 minuto. Ready na ang cake kapag naging brown na ang edges.
  8. Palamigin ang marble chiffon cake. Gumamit ng kutsilyo para i-scrape ang edges nito. Baliktarin ang cake at tanggalin ang parchment paper bago iserve.
  9. Hatiin sa serving pieces ang marble chiffon cake. Enjoy!
