Mango Bread Pie

Mango Bread Pie is a pocket size fried mango pie made with bread slices, mangos, sugar, eggs, bread crumbs. It is a small pie with a crispy outside packed with an oozing amount of mango filling. One small bite will change your mood from sad to glad. This Mango Bread Pie is inspired from Jollibees’s Peach Mango Pie.

MANGO BREAD PIE

I always eat at Jollibee and see everyone getting hyped about the Peach Mango Pie. I unfortunately am allergic to peaches that is why I never knew the feeling of satisfaction the people are getting from the peach mango pie. As I saw the peach mango pie filling, I craved a lot and I dreamt of eating my own pie. I decided that I’m going to make my own version of it, the one I am not allergic to.

The closest I could get to eating a peach mango pie is by making a mango bread pie. I was thinking of just buying a mango jam and make a mango jam sandwich but that would not feel like a peach mango pie. I looked onto recipes on the internet of a mango bread pie and I got so confident that I could make a perfect one. I went to the market the next day to gather the ripest mangoes I can get.

Those mangoes were the sweetest ones and would make the best mango pie fillings. I then knew that those mangoes with dark spots on its skin are not really rotten. They were just too ripe. And those were the ones I needed. I took the best very ripe mangoes, went home and started the mango bread pie. It took me almost just 30 minutes to prepare it. I was nearly crying as I now knew the satisfaction people are trying to tell me. The plain mango bread pie was already okay but I added chocolate syrup on it for added flavor and sweetness.

HOW TO MAKE MANGO BREAD PIE

Mango Filling

The mango filling is the most important element of our mango bread pie. The flavor of the mango filling will dictate whether the mango bread pie is overall decadent or not.

Let us first prepare the mango filling. Select very ripe mangoes from the market. These mangoes has the highest natural sweetness level compared to unripe and medium ripe mangoes. Wash the mangoes, slice and cut into cubes. Transfer the mango cubes into a pan and then add the white sugar. This step is similar to cooking a mango jam wherein a fruit is cooked under low heat and sugar is added to make it a paste-like texture with a very sweet taste. Try to incorporate the sugar into the mango cubes and stir gently. Cook the mango and the sugar until it caramelizes. Some of the mango cubes will melt during the cooking process and some mango juice will come out. You may mash some of the mango pieces but leave some chunks for added texture. Stir the jam continuously to prevent it from sticking into the pan and burning. Cook until the sauce is reduced and the resulting jam has a thick consistency. Remove the pan from the heat and let it cool on the side.

Pie Crust

The new way on how to make an easy pie crust is by using a slice of loaf bread. It is a very innovative way of creating a pie crust with simple and low cost ingredients. Basically you place a slice of loaf bread in a chopping board, cut all of the sides and then flatten the bread using a rolling pin. If you have no rolling pin, you can use a glass with a smooth edge. Once the slices of bread are flattened, then you are done. Set the flattened bread aside.

Mango Bread Pie

Making the mango bread pie is like creating a pocket-sized pie with sweet and lovely mango filling.

Get your previously prepared flattened slices of bread and lay a piece on a plate. Pour some mango fillings on one half side of the bread. Brush the sides of the bread with egg. You can use water if egg is not available. Fold the bread to close the pie and seal the sides using a fork to resemble the design of a classic pie.

Prepare two plates for the mango bread pie coatings. On the first plate, add some eggs and then scramble. On the second plate, add breadcrumbs. Crackers which are ground can be used as a substitute for breadcrumbs. Coat the mango bread pie in eggs and in breadcrumbs. It is advisable to prepare the pies first before frying as it may take time to coat the pies. Repeat this process to the rest of the pies.

Prepare a sauce pan for deep-frying. Set the temperature to medium heat. Fry the pies in batches until they are golden brown. Transfer the cooked pies in a strainer or in a tissue paper to drain the excess oil. Serve your mango bread pies hot and enjoy!

Ingredients

  • 3 ripe mangoes

  • 3 tablespoons white sugar

  • loaf bread slices

  • 2 eggs

  • breadcrumbs

  • oil for deep-frying

Directions

  • Slice three ripe mangoes and cut into cubes.
  • Place the mangoes in a pan and add 3 tablespoons of white sugar. Cook in low heat until it caramelizes. Stir occasionally. Wait until the juice comes out. Continue cooking until the sauce is reduced to half. Turn off the heat and let it cool.
  • Place a slice of bread in a chopping board and cut the sides. Flatten the bread using a rolling pin.
  • Put some mango fillings on the bread. Brush the sides of the bread with water or egg and then fold and wrap the filling. Seal using a fork. Set aside.
  • Crack 2 eggs in a small bowl and then scramble. Put some breadcrumbs in another small bowl.
  • Dip each pie in the eggs and then coat with breadcrumbs. Do the same step for the rest of the pies.
  • Heat some oil for deep-frying and fry the pies until golden brown. Put the mango bread pies in a paper towel or strainer to remove excess oil.
  • Serve hot and enjoy!
