For some, chicken breast is the worst part of the chicken. But for me, it’s a blank canvass. It’s really funny that people go loco with the coated boneless chicken but do not appreciate a chicken breast when they see one. My sister is particularly one of these type of person. Seeing her patronize these coated boneless chicken made me think of making a boneless chicken dish at home coated some special sauce.

Butter and garlic. One of the best flavor combinations in the world. It can be with garlic bread and butter, egg fried rice with garlic and butter, and meat with butter and garlic. Almost anything can be made exemplary with just the simple garlic and butter.

My sister loves butter and garlic so much. Since I have her most-hated chicken breast at home, I tried to prepare a dish that she would surely can’t say no for. If you have some chicken breast at home and worries no one will eat it, coat it in special sauce! A garlic and butter soy-based sauce would truly do the job.

These tender coated chicken breast didn’t last long when my sister started eating them. She can hardly believe it was chicken breast! That’s a trick that does not need that much magic.

How to Make Garlic Butter Chicken

Chicken in butter garlic recipe is another simple recipe which you can do to bring the chicken breast into life. Making this dish is very easy and would take you just a few simple steps!

Let’s start by preparing the chicken breast. You can buy whole chicken breast or the fillet ones. For this recipe, it would be ideal to cut them into smaller pieces. Just right to have them in bite sized pieces and to be coated easily by the sauce.

First, marinate the chicken breast in a mixture of spices. Don’t forget to add some cornstarch since this will be the one to make the chicken crispy when fried. Sear the chicken pieces until lightly browned. Do not oversear as the chicken might be dry.

Now, the most important part of the dish is the sauce. Start with the aromatic base sauteed in butter. Add the spring onions for some freshness and chili flakes if you like it with a kick. Add the soy sauce and calamansi juice. Don’t forget to add the slurry to thicken it out. A thick sauce will coat on the chicken pieces better. Make sure to taste the sauce before tossing in the seared chicken pieces. And it’s done!

I really love having this chicken in butter garlic sauce as a rice topper. I sometimes also add this to fried egg noodles! Love love love! Super yummy.

Ingredients

  • ¾ kilo chicken breast

  • 6 cloves of garlic (minced)

  • 1 thumb ginger (grated)

  • 2 tablespoons of butter

  • 2 tablespoons of soy sauce

  • 2 tablespoons of slurry

  • 1 teaspoon of calamansi juice

  • A bunch of spring onions (minced)

  • Salt and pepper to taste

  • 2 teaspoons of paprika powder

  • 2 tablespoons of cornstarch

  • ½ teaspoon of garlic powder

  • Chili flakes to taste

Directions

  • Wash, prepare and slice the chicken breast into serving pieces and then place them into a bowl. Add the paprika powder, pepper, salt, cornstarch, garlic powder, and grated ginger. Mix until well combined. Marinate for at least 30 minutes.
  • Heat some oil in a pan. Add the marinated chicken and sear for 3 to 5 minutes. Flip to cook the other side. Remove them from the pan and set aside.
  • Melt some butter in the same pan. Add the garlic and onions and saute for 30 seconds. Add the chopped spring onions and chili flakes and saute for a few seconds.
  • Add the soy sauce, slurry and calamansi juice. Mix well until thick. Season with salt and pepper.
  • Add the seared chicken back to the pan and toss gently until well coated with the sauce. Turn the heat off.
  • Transfer the chicken in garlic butter sauce to a serving plate. Top with more spring onions before serving. Enjoy this with some hot steaming rice. Yum!
