Ingredients

  • 1/2 kilo chicken thighs

  • 1/3 cup soy sauce

  • 4 tablespoons honey (or brown sugar)

  • 1 tablespoon leeks (chopped)

  • Sesame seeds (optional)

Directions

  • Prepare the chicken thighs and slice them into bite sized pieces.
  • Heat a pan using medium heat and sear the chicken evenly. Flip each piece to sear the other side. Continue cooking until the chicken’s skin starts to render some oil.
  • Add the soy sauce and honey. Mix well until the sauce becomes thick and fully coats each chicken.
  • Once the sauce is thick and reduced, add the chopped leeks. Stir for around 3 minutes.
  • Transfer the easy chicken teriyaki to a serving dish and top with roasted sesame seeds. Serve it with some hot steaming rice. Yum!

TERIYAKI

Are you curious on what teriyaki means? Me too. Teriyaki comes from the words “teri” which means “shine” and “yaki” which means grilled. The traditional teriyaki involves any meat which is glazed by something sweet (usually sugar and sake) and then grilled.

This dish evolved through time and the teriyaki is now what we know as any meat coated with some sweet sauce made with soy sauce, sugar or honey and then sake or sweet wine. The Pinoy version of this dish does not involve the sweet wine. And usually, teriyaki is topped with roasted sesame seeds. If you see a dark colored sauce with sesame seeds on it, it is more likely a teriyaki dish.

EASY TERIYAKI CHICKEN

Running out of food from the pantry is one of the scariest things a foodie like me can experience. I had been super busy lately and was shocked to find out that I ran out of veggies and aromatics. I think I just had a few chicken pieces left, some greens, some aromatics, and just a few condiments. Even my vinegar had ran out!

Instead of being sad, I treat these experiences as a challenge. First, I nap. And then, I think of a dish which can be made with my remaining ingredients. At first, I thought of simply sweet soy chicken, because you can make them with simply soy, sugar and chicken. But I saw my honey chilling in the rack.  Then I remember about the sweet honey and soy chicken I had at a Japanese resto last month.

What I love about the teriyaki chicken is it uses very simple ingredients but produces one of the best tasting flavor combination. Sweet, savoury, salty and umami. I bet the teriyaki sauce also tastes good with pork, beef and fish!

HOW TO COOK EASY TERIYAKI CHICKEN

As the name says, this teriyaki chicken is super duper easy. Start by searing the chicken. This adds flavor to the dish and helps seal the flavorful juices of the chicken. The soysauce and honey would be the sauce base. So easy, right? Remember to do a taste test and add some water if its too salty for you. Lastly, add some chopped leeks. You may sprinkle some roasted sesame seeds before serving. And it’s done!

I love topping teriyaki chicken on hot steaming rice. I sometimes add a little sesame oil on it too. Try it!

  1. Ihanda ang mga hita ng manok at hiwain ng bite sized pieces.
  2. Painitin ang kawali gamit ang katamtamang apoy at iprito ang mga manok. Baliktarin ang mga ito para maluto ang kabilang side. Lutuin ang mga ito hanggang magmantika na ang balat ng manok.
  3. Ilagay ang toyo at honey. Haluin ng mabuti hanggang lumapot ang sauce at malagyan lahat ng manok.
  4. Once the sauce is thick and reduced, add the chopped leeks. Stir for around 3 minutes.
  5. Kapag malapot na ang sauce, ilagay ang mga leeks. Lutuin pa ito ng 3 minuto.
  6. Ilipat ang easy chicken teriyaki sa serving dish at lagyan ng tustadong sesame seeds sa ibabaw. Samahan ito ng mainit na kanin. Yum!
