Easy Fried Chicken with Gravy

EASY FRIED CHICKEN WITH GRAVY RECIPE

  1. In a large bowl, add the cornstarch, all purpose flour, salt, black pepper, garlic powder  and paprika powder and gently mix. Add some cold water and mix well until you get a slightly thick consistency. Set aside.
  2. Prepare the chicken drumsticks and arrange them in a container. Pour the chicken batter and gently mix to coat each chicken with the batter. Set aside and marinate for at least an hour.
  3. Heat a lot of oil in a pan. Gently add the drumsticks in the oil and deep fry for 10 to 12 minutes using medium heat. Flip each to the other side to cook evenly. Transfer them to a strainer or paper towel and let rest for 15 minutes.
  4. Raise the heat of the oil to high heat and then double fry the chicken for 2 to 4 minutes to make them crispier. Set them aside to a strainer to drain excess oil.
  5. For the gravy, melt the butter in a pan and then add the all purpose flour. Stir and cook them for a minute using low heat. Add half of the milk and then stir. Add the rest of the milk and then stir until thick. Add the water, beef broth cube and soy sauce. Stir and mix well until thickened. Season with some ground black pepper.
  6. Transfer the crispy fried chicken to a serving plate and serve with some homemade gravy on the side. Have this with some rice, mashed potatoes or make papak. Yum!

GRAVYLICOUS GOODNESS

When we are served with fried chicken without gravy, our eyebrows rises instantly. If there is KathNiel, LizQuen and JaDine, there is also fried chicken and gravy. No sauce is better than gravy if it is for fried chicken. But when did we start using gravy?

The term gravy came from the word “grave”. This term is usually seen in medieval French cook books, which implied that this is the natural juices coming out from the meat once roasted. The origin of gravy had so many speculations which made it uncertain. But all we know is that across the world, gravy is served with a meat to make it “less dry” when eaten, which is why it is usually served with roasted meat. That made sense since the drippings from the roasted meat were the ones used in making the gravy rich and meaty in flavor.

In today’s world, it is fried chicken which is always served with gravy on the side. Gravy is made from flour and fat which is combined and then diluted into a thick sauce. Now, there are a lot of instant gravy where you only need to mix it with some water. These might be convenient but homemade gravy is always one level better.

Fried chicken is, no doubt, everyone’s comfort food. Whenever I enter a unique resto and I am not sure what to order, I automatically look for fried chicken. You can never go wrong with fried chicken.

Even if fried chicken is a very simple dish, a high quality fried chicken would always be the crispy and coated one. (Sorry Max’s). Whenever I see a nice and crispy golden brown chicken skin, then I am already 50% satisfied.

I have been making fried chicken for the past few years. Just like any other cooks, I have experienced failed ones. What I learned from the past few years is that the chicken batter, which coats the chicken and make it crispy, is the most important part of the chicken. Once the batter fails, then it’s game over no matter how flavorful the actual chicken is.

Scrolling through the internet, I have seen many many recipes for fried chicken. Most of them have the same batter ingredients but in different ratios. The batter and coatings are usually what makes a chicken unique. Some recipes had more cornstarch than flour, some has more flour than cornstarch, some has only had cornstarch and some had only flour.

If you had been lost among these online recipe, your suffering ends here. Simply follow the batter ration in this recipe which has been tried and tested for years. Not only crispy but also super yummy!

I added an additional gravy recipe to this blog since a lot of people had been requesting to. I have been a fan of KFC’s unli gravy before, but then I learned how to make at home which is customized to my taste. 101 times better!

HOW TO COOK EASY FRIED CHICKEN WITH GRAVY

This easy fried chicken is literally EASY! As they say, you’ll never go wrong with fried chicken! And because Yummy Kitchen loves you, we’ll give you a bonus recipe on how to make your homemade gravy! No need to shop for gravy if you can make one at home.

Let’s start with the chicken. When we say fried chicken, we usually associate it with chicken drumsticks. But remember that whatever part of the chicken can be made into fried chicken if you want to!

One of the best things about using chicken drumsticks in a dish is that there are no pre-preparation needed, unlike fish and shrimp which must be gutted and deveined before cooking. Simply wash them and get them ready to dip in our homemade batter.

The homemade batter will coat the chicken to make sure that they will go crispy after frying. To make the batter, simply combine the batter ingredients listed below. Just remember to use cold water for this. If it will take time for you to use the batter, you can refrigerate them for a while or add some ice cubes. What’s important is that the batter is cold when it coats the chicken before frying.

Heat some oil and let’s get to frying. If you have deep fried anything in the past, then this step will be super easy for you. Coat the chicken drumsticks in the cold batter and then straight up fry them in hot oil. Hmmm crispy! But the legit hack of cooking crispy chicken is double frying them. Yep, you read that right! Let the fried chicken rest first for a few minutes. Increase the heat of the oil to high heat and then doubly fry the chicken. This second fry might only take a few minutes compared when you first fry the chicken. Just make sure to look after them so they won’t burn! (Coming from experience haha)

The fried chicken is now done so let them drip the excess oil while sitting in a strainer.

While waiting, let’s make the gravy. You’ll be surprised that the unli gravy at KFC is literally super easy to make and you can also have unli gravy at home.

Start by melting some butter in a pan and then adding equal amounts of flour. It means that when you used 1 tablespoon of butter, you will also add 1 tablespoon of flour. Mix and combine these to a heated pan to make a roux. This roux might be thick and sticky at first. Dilute it with some milk (you can use fresh milk or any milk) and then mix until it thins out. Lower the heat so the milk won’t burn. Season it with some broth cubes (usually beef) and then some soy sauce for color. Only a few drops of soy sauce since the gravy is already salty. And then it’s done!

Serve your crispy fried chicken next to your homemade gravy. Make papak or serve it with some hot steaming rice. Yum!

  • 1 beef broth cube

  1. Paghaluhaluin ang cornstarch, harina, asin, paminta, garlic powder at paprika powder sa isang bowl. Ibuhos ang malamig na tubig at haluin ng mabuti hanggang maging malapot at walang lumps. Isantabi.
  2. Ihanda ang mga drumsticks at iayos ang mga ito sa lalagyan. Ibuhos ang ginawang batter at haluin hanggang malagyan lahat ng piraso. Isantabi at imarinate ang mga ito ng isang oras.
  3. Magpainit ng maraming mantika. Ilagay ang mga drumsticks ng paisa-isa sa mainit na mantika at ideep fry ng 10 – 12 minuto gamit ang katamtamang apoy. Baliktarin ang mga ito para maging pantay ang luto. Ilipat ang mga pritong manok sa strainer o paper towel para tumulo ang sobrang mantika. Isantabi ang mga ito ng 15 minuto.
  4. Painit ang mantika gamit ang malakas na apoy. I-double fry ang mga manok ng 2 – 4 minuto para mas maging crispy. Ilipat ulit ang mga ito sa strainer o paper towel para tumulo ang sobrang mantika.
  5. Para sa gravy, tunawin ang butter sa kawali saka ilagay ang harina. Haluin ito ng 1 minuto gamit ang mahinang apoy hanggang maging malapot. Lagyan ng tubig, beef broth cube at konting toyo. Tuloy tuloy na haluin hanggang maging sakto ang pagkalapot. Lasahan ito ng paminta.
  6. Ilipat ang crispy fried chicken sa serving plate at ihain kasama ng homemade gravy. Samahan ito ng mainit na kanin, mashed potatoes o papakin ito. Yum!
