Creamy Lemon Chicken

CREAMY LEMON CHICKEN RECIPE

  1. Prepare the chicken breast pieces. Make some criss cross slits on the surface for better absorption of the flavors and to cook them faster. Season with some salt and pepper. Sprinkle some oregano leaves. Do these also on the other side.
  2. Heat some oil in a pan. Melt the butter. Sear the chicken fillets for a few minutes and then flip to sear the other side. Flip occasionally until cooked. Once both sides are browned, transfer them to a strainer or paper towel to drain excess oil. Set aside.
  3. Wipe the pan with a paper towel to remove excess residue. Turn the heat to medium and then melt the butter. Add the white onions and garlic and then saute until light brown and aromatic.
  4. Add some water and squeeze half of a lemon (remove the seeds). Stir gently. Add half of the all purpose cream and chopped parsley, then stir well. Season with some salt and pepper to taste. Sprinkle some dried basil leaves (optional). Allow the mixture to boil for a few minutes.
  5. Add the seared chicken back to the pan and baste them with the creamy sauce. Cover the pan and let it simmer for around 10 to 15 minutes.
  6. Transfer the creamy lemon chicken to a serving plate and enjoy this with some newly steamed rice. Yum!

Chicken is a versatile ingredient, but not chicken breast. If you will be cooking chicken breast, extra thinking is always needed to make sure they will not end up dry, or else it would not be fun to eat. Even if you put it in a soupy dish like tinola for example, chicken breast cooked as tinola is still not that fun to eat! (Sorry)

With my years of cooking experience, I noticed that chicken breast really goes well with thick saucy dishes compared with the soupy or fried ones. One of the best sauces you can pair chicken with is cream.

I have been cooking chicken dishes for the past few days and all I have left in the fridge are the chicken breast. Since I have my cream and lemon, it is the sign for me to cook some creamy lemon chicken.

What I love about this dish aside from making the chicken breast juicy is that the lemon really made a difference for the creamy sauce not to be “nakakaumay”. With the thick creamy sauce, I sometimes eat this dish like a steak, or have it with some hot rice.

HOW TO COOK CREAMY LEMON CHICKEN

Making creamy chicken is as easy as other chicken recipes. You’ll be surprise on how we can level up the usual dry and boring chicken breast. With this dish, you can make a creamylicious one in under 30 minutes!

Start with preparing the chicken breast. Instead of cutting them into small pieces, I recommend you to cut them into medium ones, almost similar to the size of the steak. Cut some slits on them so that more flavors will be absorb. To help them extract their natural flavors, rub them with some salt and pepper. I also used dried oregano leaves for some Italian vibes.

When the chicken is ready, it’s time to sear them! Heat some oil and then melt some butter. This hack will prevent the butter from burning as we will be using this to sear the chicken which might take a few minutes. Add the chicken and flip them from time to time to cook them evenly. When nicely seared, set them aside.

There might be chicken residue in the pan so wipe them off first before we make the creamy sauce. The residue might cause a burnt taste when not removed.

Melt some butter and then saute the aromatics. To give a slight hint of citrus tanginess, add some water and some lemon extract. You can also use lime or calamansi juice if you want. Then, add the all purpose cream or heavy cream. This is the base of our creamy sauce. Season the sauce by adding salt, pepper, basil leaves and oregano leaves. I really love herbs in creamy sauce! If you have another herbs in mind, feel free to use them.

The last step is to add the seared chicken back to the pan. Allow it to simmer and absorb the creamy sauce before turning the heat off. Serve this dish as an ulam to a bowl of hot steaming rice or you can also top it in some pasta! Yum!
