COOKIES IN A PAN

Cookies are my favorite snack with warm milk before I go to bed. I did my very first cookies in a pan when my niece requested for a cookie in the middle of the night. We have no oven or even a toaster in the house but to prevent my niece from throwing her tantrums, I knew I needed to find a way to produce cookies. I looked up on the internet and saw this video on baking cookies in a pan. I have doubted this process at first since I knew that cookies need to be heated both at the top and bottom at the same time. But after successfully using the pan to bake my niece’s cookies, I realized cookies aren’t really that complicated to cook. I continuously bake my cookies using this process and it had produced the same great quality but without expensive equipment. There are no bake chocolate cookies recipes.

HOW TO BAKE NON-OVEN COOKIES

Baking cookies in a pan is as easy as baking cookies in an oven. You first need to prepare your cookie dough. Place your butter, sugar, vanilla extract and egg in a large bowl and mix gently. Then you add your dry ingredients. You may add different flavors on your cookie dough but in this recipe, we will use chocolate chunks. You may buy a bar of your favorite chocolate and just cut them into small pieces but there are also ready-to-use chocolate chips available in the market. I would recommend to use easy-to-melt chocolate for a better cookie experience. It is advisable to mix the dough manually using a rubber spatula for you to have a complete control on it. Once all of the ingredients are mixed, fold them gently to avoid over mixing. Over mixing can result in a crispier and flatter resulting cookies.

After the dough is perfectly mixed, place it a container and allow to chill in the fridge for 15-30 minutes. When chilled, scoop the dough and form small balls. Place them in a parchment paper and chill again. If parchment paper is not available, you can use your regular container but make sure that the cookie dough balls are not sticking to each other. The last dough chilling will take 15-30 minutes. Chilling the dough allows the resulting cookies to have a firmer shape.

It’s baking time. Put your pan in the stove under low heat. It is advisable to use any available flat pan to ensure the proper distribution of heat in the pan. Grease the pan with butter. Do not over grease your pan as the excess butter will fry your cookies instead of bake. Put your cookie balls in the pan and flatten each ball. The shape of your cookies will be determined by how you shape and flatten them during this stage. When the cookies are ready, cover you pan with a metal lid. This is to simulate the heating process of an oven. If you have no metal lid, you can use aluminum foil as a substitute. Let the cookies cook for 5 to 7 minutes. Before flipping the cookies, make sure to check if the bottom part of the cookies are golden brown. Cover the pan and continue to cook the other side of the cookies. When both sides of your cookies are golden brown, that’s when you know your cookies are ready.  Serve your fresh cookies with warm milk.
