Garlic Butter Shrimp

Garlic butter shrimp is a fresh shrimp dish, where shrimp is cooked with butter, sprite\, tomato sauce and other spices. Shrimp is marinated in fresh sprite and fried in butter and garlic. Shrimps may be small, but their prices are terrible. When my lolo bring shrimps for me to cook, I know there is something special going on. It is always a pressure for me to cook the shrimps well. Cooking shrimps might look like just heating them and wait until they turn orange. But they’re not. You undercook them, it will taste mushy. You overcook them, they will be too dry.

Garlic butter shrimp recipe is one of the easiest and “safest” dish to make. Just like its name, you will only be needing garlic and butter. Making this dish is just like ginisang hipon but the only aromatic you need is garlic— A LOT OF GARLIC.

A GARLICKY AND BUTTERY HISTORY

Filipinos have unique ways of making shrimp dishes our way. These includes halabos na hipon, sinigang na hipon, shrimp in oyster sauce and many more. But did you know that the garlic and butter combo flavor actually originates in France? This combo was originally used as bread spreads and for mushroom dishes. Some argues that our halabos na hipon was the origin of garlic buttered shrimp.

Now, the garlic butter flavor is one of the best flavors not only for shrimps, but also for other chicken and pork dishes. What’s unique with the garlic and butter flavor is the blending of the aromatic earth flavor of the garlic and the softness and creaminess of the butter.

Garlic buttered shrimp is very famous worldwide. Most garlic butter shrimp are peeled and are headless but for the Filipino version, we remain the shells intact for we believe that it helps lock and seal the flavors in it.

3 EASY WAYS ON HOW TO CLEAN AND DEVEIN YOUR SHRIMP

Cleaning shrimps actually is not that simple as it seems. The two important things to consider are the shrimp surfaces and the veins.

  • Just like other shellfish, shrimp surfaces can be cleaned using clean water. Simply remove physical dirt, if any.
  • Deveining is a controversial topic when it comes to shrimp cooking. But for me, if your shrimp recipe involves shrimp soaking up the flavor from oil or sauce, just like this recipe, it is highly recommended to devein a shrimp. The black vein is actually the shrimp’s digestive tract, which is why a lot of people want it removed. Deveined or not, the shrimp will be safe to eat. To devein a shrimp, simple get a toothpick or a sharp tool, and then go to the middle part of the back of the shrimp. Slightly crack the shell open, and then pull the vein.
  • If you want to remove the shells, do it on this step. If you want to remain the shells intact, remove the sharp thingy on the head of the shrimp and cut the tails. In this way, you can enjoy the flavors in the shell without getting hurt.

HOW TO MAKE GARLIC BUTTER SHRIMP

Marinate the shrimps in lime soda. In this recipe, I used Sprite [not sponsored]. Make sure to cover all the shrimp with the lime soda to let them soak all the sweetness up from the soda.

After marinating, it’s now time to get in front of the stove. Remember to use high quality butter fo the best garlic butter experience. Melt the butter and brown your garlic. Your house will definitely smell so good after this step! Add the strained shrimp into the pan and toss gently. When your shrimps turned orange, that’s a good sign that your shrimps are cooked. Just toss them a few more minutes and then it’s good. Some are already satisfied with the shrimps after this step and serve them right away. At Yummy Kitchen, we will take a few more effort and make a pairing sauce for the lovely shrimps.

Shrimps and other shellfish are very prone to being too dry when overcooked. Before we make the sauce, remove the cooked shrimp from the pan. A tomato-based sauce will make a good pair for our garlic butter shrimp. The tanginess, garlicky and buttery flavor bumping each other, tickling our taste buds.. Best shrimp dish ever!

Our tomato-based sauce is very easy and quick to make. For convenience, I used tomato paste. Simply combine tomato paste, some lime soda and oyster sauce and let the sauce thicken. You can actually use the lime soda you used as the marinade but I opted to use a fresh one. When the sauce is done, you can choose whether you toss the cooked shrimp back to the pan to coat them or use the sauce as a dipping sauce. Finish your garlic butter shrimp with some chopped spring onions. Serve it as an appetizer, pulutan or with rice. Enjoy!

Ingredients

  • 500 grams shrimp (cleaned and deveined)

  • 1 1/3 cup lime soda (Sprite or 7UP)

  • ¼ cup butter (unsalted)

  • 7 cloves of garlic (minced)

  • 1 tablespoon tomato paste

  • 2 tablespoons oyster sauce

  • chopped spring onions (for garnish)

Directions

  • Clean and devein the shrimps and then place into a large bowl. Pour around a cup of lime soda. Marinate for around 15 minutes.
  • Heat a pan and melt some butter. Add the minced garlic and let it cook using low heat until browned.
  • Strain the marinade and add the shrimps to the pan. Toss them gently and cook until they change into orange. After a few minutes, remove the shrimps from the pan.
  • Put the tomato paste into the same pan and sauté for a minute.
  • Pour around 1/3 cup of lime soda into the pan. Stir until well-combined.
  • Add the oyster sauce and mix well. Let it cook until the sauce is reduced and slightly thickened.
  • Place the shrimps back to the pan and toss gently to coat with the sauce. Season with salt and pepper. Stir gently.
  • Transfer the garlic butter shrimp to a serving plate and sprinkle with some chopped spring onions. Make papak or serve with hot steaming rice. Enjoy!

Garlic Butter Shrimp Recipe (TAGALOG)

MGA SANGKAP:

  • 500 grams hipon (nalinis at natanggalan ng vein)
  • 1 1/3 tasa ng lime soda (Sprite o 7UP)
  • ¼ tasa ng butter (unsalted)
  • 7 butil ng bawang (hiniwa ng maliliit)
  • 1 kutsara ng tomato paste
  • 2 kutsara ng oyster sauce
  • spring onions (hiniwa)

PAANO LUTUIN:

  1. Linisin at tanggalin ang vein ng mga hipon. Ilagay ang mga ito sa malaking bowl at ilagay ang sprite. Imarinate ng 15 minuto.
  2. Tunawin ang butter sa mainit na kawali. Ilagay ang bawang at lutuin ito gamit ang mababang apoy hanggang maging brown.
  3. I-strain ang marinade at ilagay ang mga hipon sa kawali. Lutuin ang mga ito hanggang maging orange. Pagkatapos ng ilang minuto, alisin ang mga hipon sa kawali.
  4. Ilagay ang tomato paste at igisa ng 1 minuto.
  5. Maglagay ng 1/3 tasa ng sprite at haluin.
  6. Ilagay ang oyster sauce at haluing mabuti. Hayaan maluto ang sauce hanggang maging malapot.
  7. Ilagay ang mga hipon sa kawali at haluin para malagyan ng sauce. Budburan ng asin at paminta at haluin.
  8. Ilipat ang garlic butter shrimp sa serving plate at budburan ng spring onions. Papakin ito o samahan ng mainit na kanin. Enjoy!
