What is a Kaldereta?

Kaldereta or ‘Caldereta’ is a flavorful stew made of tender meat, vegetables like potatoes and carrots and sometimes even bell peppers, additional flavors from garlic and onions, liver spread, tomato sauce and in this recipe 7 Up, boiled and simmered into a wonderful pot of goodness to accompany a cup of white warm rice.

Caldereta can be considered a great introduction for meat lovers into the world of Filipino cuisine. A beefy saucy mouth watering dish with deep roots, the traditional Kaldereta is a combination of Spanish and Filipino cuisine. “Caldereta” came from the Spanish word ‘cauldron’ a metal pot with a lid used to cook over an open fire. Which suggests the method of how Caldereta was once cooked, this method may be because the meat in the dish is stewed for hours till its tender and soft and the direct heat of the fire to the pot helps give it more control at those times.  The recipe used to have goat meat and vegetables, but now commonly use beef chunks or variations of chicken or pork stewed in tomato sauce, with vegetables added as an afterthought to add more color or filler. 7 Up Kaldereta and why you should add 7 up?

7 Up is an American brand of soft drink that was originally named “Bib-Label Lithiated Lemon-Lime Soda” in 1949 by Charles Leiper Grigg, because it contained Lithium citrate, a compound now used in treating bipolar disorder and depression. This compound was eventually removed and banned by the government after evidence of its side effects. Against all odds the formulation kept changing to create “7 Up Lithiated Lemon Soda” shortened further to “7 Up” in 1936 with the final name origins unclear. & up today are used as an iced drink to pair with dishes, mixer for alcoholic cocktails, baked goods, and meaty dishes.

Soft drinks have been seen in the culinary world for quite some time. These sparkling drinks have been added to cakes to add another hit of flavor with the carbonation from the drink helping keep the cake moist and airy. Ingredients

  • 1 kilo beef chunks

  • 1 teaspoon salt

  • ½ tablespoon whole peppercorn

  • 5 garlic cloves (crushed)

  • Water for boiling

  • 1 tablespoon oil

  • 1 cup potatoes (chopped)

  • 1 cup carrots (chopped)

  • 2 bell peppers (chopped)

  • 3 tablespoons garlic (minced)

  • ½ cup onions (sliced)

  • ½ tablespoon pepper

  • 1 & ½ cup 7 Up

  • 1 can (85G) liver spread

  • 1 cup tomato sauce

  • Salt to taste

Directions

  • Boil the beef; season the beef chunks with salt and place these into a pot. Add in whole peppercorn, garlic cloves, and add enough water to cover the beef. Boil these for 1 to 2 hours or till tender.
  • In another pot or wok, add oil, potatoes, and carrots, sauté till the sides have browned. Add the bell peppers and mix to coat with oil. Take out and set aside.
  • With the remaining oil, cook garlic and onions till the onions are translucent. Add the beef, pepper, 7 Up, and liver spread. Mix well and cover for 5 minutes. Add the vegetables and tomato sauce, mix well and cover for 7 to 10 minutes. Mixing often.
  • Taste, add salt or pepper if needed. Take this out of the stove to serve. The sauce will thicken as it cools.

Notes

  • To check if the beef is tender, use a fork or knife and this should easily pierce though the beef.
  • Cooking beef with bones may take a longer time to soften.
  • Use the leftover beef broth by straining it and using it to as stock for your next dishes.
  • Add any vegetables to your liking like green peas or leafy vegetables instead of potatoes or bell peppers. Or spice it up by adding chilies as well.

7 UP Kaldereta Recipe (Tagalog)

Sahog: 

  • 1 kilo beef chunks
  • 1 kutsaritang asin
  • ½ kutsarang buong paminta
  • 5 butil ng bawang (tinadtad)
  • tubig na pangkulo
  • 1 kutsarang mantika
  • 1 tasa patatas (hiniwa ng maliliit)
  • 1 tasa karot (hiniwa ng maliliit)
  • 2 bell peppers (hiniwa ng maliliit)
  • 3 kutsarang bawang (tinadtad)
  • ½ tasa sibuyas (hiniwa)
  • ½ kutsarang paminta
  • 1 & ½ tasa 7 Up
  • 1 lata (85G) liver spread
  • 1 tasa tomato sauce
  • asin pampalasa

Paano Lutuin:

  1. Kuluin ang beef; haluan ito ng asin at ilagay sa kawali. Dagdagan ng buong paminta, butil ng bawang, at lagyan ng tubig para matakpan ang beef. Pakuluin ito ng 1 o 2 na oras o hangang lumambot.
  2. Sa ibang kawali o wok, lagyan ng mantika, patatas, at karots, lutuin hanggang mag kayumanggi ang mga gilid nito. Idagdag ang bell peppers at haluin para matakpan ng mantika. Tanggalin ang mga gulay sa kawali at itabi.
  3. Gamit ang natitirang mantika, lutuin ang bawang at sibuyas hangang mag aninag ang itsura nito. Ilagay ng beef, paminta, 7 Up, at liver spread. Haluin ng mabuti at takpan ang kawali ng 5 minuto. Idagdag ang gulay at tomato sauce, haluin at takpan muli ng 7 o 10 na minute. Haluin ito paminsan minsan.
  4. Tikman, dagdagan ng asin o paminta kung kinakailangan. Tangalin ito sa kalan para handain. Kakapal ang sauce pag lumamig na ito.
